Pretty in Pink Dessert: Pomegranate Posset

Pomegranates are the most beautifully bejeweled inviting looking fruit you could ever wish for. Their downsides are that they are so fussy to eat, and don’t have such a strong flavor apart from being wonderfully sweet.
So when I looked at the Pom’s in my fruit crate and decided I would do something more productive with them, I was focusing on their glistening seeds and forgot about their downsides, easily  distracted one might say, alas this simple pudding was a hit, as well as looking oh so pretty in pink, which for me was the main objective!

300ml double cream
Juice and seeds of 1 pomegranate
Juice of half/whole a lemon, depending on how you feel
70g caster sugar
For Serving: crushed biscuits of choice, a few reserved seeds and a dollop of creme fraiche

Put all ingredients into a non-stick saucepan, and bring up the heat, stirring constantly until bubbling, keep bubbling for 2-3 mins, then remove from heat and pour into serving method of choice. Leave in the fridge for at least a couple of hours until set. Decorate to serve or serve with biscuits.

The pomegranate was successful I felt, a subtle sweet flavor, and the seeds gave lovely little jewels of juice all the way through.
